内容記述 | Japanese diet has changed to the Western style for the past 60 years. To elucidate the food intake and nutritional status, we conducted the dietary survey in the young generation of Japan and China. The menus of elementary school lunch were compared between the both countries and the abundant varieties of Japanese food materials were observed. The pork and vegetables were used frequently in the Chinese menus. Dietary surveys were conducted in the college student during one week and food materials and intakes of nutrients were compared. Higher amount of the intake of nutrients except calcium were shown, and meat, fish and oils/fats were consumed more abundantly in the Chinese students. As results, the intake of omega 6 fatty acids in the Chinese students was significantly higher than in Japanese students. The point of views of Chinese college students about food and nutrition were surveyed and discussed. Although fish consumption of the Japanese has decreased recently, the essential fatty acid balance (n-6/n-3 ratio) of the Japanese is considered to be lower as compared with the other nations such as Chinese. | |||||
