Therefore it is considered to be useful for improvement of the essential fatty acid balance. However, previous studies showed that rapeseed oil shortened the survival of SHRSP rats compared with soybean oil. These results indicate the possibility that rapeseed oil contains minor harmful compounds. In this study, we evaluated the safety of rapeseed oil made in China and Japan. Using several cell lines, we did not detect the marked toxicity of these rapeseed oil as compared with soybean oil. We also measured some indexes for the quality of edible oil such as fatty acid composition, polyphenol content, antioxidant activity, acid value (AV), peroxide value (POV), viscosity and color tone.
